I’m so excited one of my good friends and fellow blogger, Katie from Katie’s Cucina and Sew Woodsy is having a baby! Yeah. I just love her.
This is her and her adorable husbands first baby! I’m terribly excited for them. I might just have to go see Katie after the baby is born just so I can smell its sweet baby head. Weird? Sorry.
If she is anything like the majority of new Moms, the last thing she will want to do is cook.
People often make dinners for new parents, but new parents need a quick and easy breakfast too!
I love oatmeal, but hate cooking it, because it ALWAYS boils over….never fails!
Seriously there is nothing easier than Overnight Oatmeal…no cooking and no boiling over.
All you do is mix your ingredients the night before and just like that you have a nutritious breakfast for in the morning. Some morning I eat it right out of the fridge and other mornings, I pop a some in the microwave to take the chill off.
I prefer a “meatier” oatmeal like a steel cut or my favorite,ย Coach’s Oats. You can use regular oats, but I found the texture to be really mushy.
You can add whatever flavorings you like. I go with the simple brown sugar/maple oatmeal…my fav.
Oh and I always add Dole Chia seeds to my oatmeal for extra nutrition and extra filling power.
- 1 cup Oats (steel cut or Old Fashion)
- 1 cup Coconut Milk
- 2 cups Unsweetened Vanilla Almond Milk
- 1 tablespoon Chia Seeds
- 1/4 teaspoon Maple Extract
- 1/4 cup Brown Sugar
- In a medium bowl, mix together all ingredients except brown sugar.
- Cover and place in the refrigerator for 8 hours to overnight.
- Before serving mix in brown sugar.
- Top with fresh fruit and toasted coconut if you wish

I just read about overnight oats on another blog and figured it’s time I try. Then I came to yours and now I MUST try, because I think you’re the best ๐ Me and my sister think you are hilarious. I don’t know if I’ve told you that before, but we do! lol Can’t wait to try the overnight oats!
