I decided on white on white cupcakes, cause I’m boring and predictable.
No, truthfully, I like clean and simple. Soo, white on white is what I wanted.
Cute huh?
These cupcakes would be perfect for just about any ocassion.
Think white wedding cupcakes, white baby shower cupcakes, white bridal shower cupcakes.
You can dress them up as I did with simple chocolate letters.
“L” is for Kristans little ones name “Lucy”. Love that name.
For the chocolate letters, all you do is line a baking sheet with parchment paper, melt white chocolate in a bowl. Put into a zip lock baggies, snip the corner and pipe your desired letter onto the parchment paper. Place in the fridge for 5 minutes and the letters will come right off. I also used a drop of pink frosting for my pink letters and hearts.
And the frosting is just about the easiest you can come by…
Pudding mix, milk, cool whip and meringue powder.
I love it because it is not toooo sweet.

Another thing I love about this recipe is that it starts with a White Cake Mix that you doctor up nice and good.
These cupcakes are PERFECTLY moist, flavorful(in a non boxed mix way) and rise wonderfully.
Dare I say these are the best white cupcakes I have ever tasted? YUP.
White Cupcakes with Pudding Frosting |
- Cupcakes
- 1 18.25 oz. box white cake mix (Betty Crocker or Pillsbury)
- 1 cup flour
- 1 cup sugar
- 3/4 tsp. salt
- 1 1/3 cups water
- 1/8 cup vegetable oil
- 2 tsp. vanilla extract
- 1 cup sour cream
- 3 large egg whites
- 1 egg
- Pudding Frosting
- 2 3.4 oz package Instant Pudding Mix (I used cheesecake flavor)
- 3 tablespoons Meringue Powder
- 2 cups Cold Whole Milk
- 2 teaspoon vanilla extract
- 16 oz. Cool Whip, thawed
- Preheat oven to 325.
- Place cupcakes liners into cupcake pan.
- Place all dry ingredients in a large mixing bowl and beat with electric mixer until mixed.
- Add water,oil,vanilla extract,sour cream,egg whites and egg.
- Beat on medium high for 2 minutes.
- With a cookie scoop(so they are all filled with the same amount), fill 3/4 of the way full.
- Bake in a preheated 325 degree oven for 20-22 minutes or until a toothpick inserted in the center comes out clean.
- Allow to completely cool prior to frosting.
- In a medium bowl, with an electric mixer, mix together the pudding and meringue powder.
- Add the milk and vanilla extract.
- Beat for about 1 minute or until the mixture becomes thick.
- Beat in the Cool Whip and beat until just combined.
- Place in the refrigerator for 30 minutes to chill and set.
Makes about 36 cupcakes.
Frosting makes enough to frost all 36 cupcakes with a nice tall frosting.

I am so intrigued by this frosting. Not that it’s health food, but I wonder if it’s a little “lighter” than the shortning/butter frostings? I am definitely going to try it- thanks! Oh, and the cake mix also. Sounds yummy!

Yes, this frosting is a little lighter and not as sweet as your normal Powdered Sugar Frosting.

The pudding frosting holds up well.Make sure you chill in the fridge right after you make it and then it would be fine.
They sat out a few hours in the a/c and were perfect.

Hello, your cupcakes are beautiful!! I tried making some for my daughter’s bday but its nowhere close to what you did. My cupcakes are not as white and my frosting just won’t hold. It’s very watery even after I put it in the fridge for a while. Any tips you could offer me pls? May I send you a photo of the result pls? Tks!
