Cupcakes for two. Seriously? I know, I know, probably not a good recipe to have on hand. The fact that I can whip up 2 cupcakes in 20 minutes is a pretty dangerous situation for me. Well, I suppose I can be positive and think, “At least I don’t have 24 cupcakes sitting around the house”.
I found the original recipe for the cake part of the cupcake over at How Sweet It is. However I had to jazz them up with some almond extract and fill them with some yummy black raspberry jam.
The cupcakes are not your traditional light as air, bakery style cupcake. They are a bit more dense. Perfect to me!
| Cupcakes for two |
- Cupcake
- 1 egg white
- 2 tablespoons sugar
- 2 tablespoons butter, melted
- 1 teaspoon vanilla
- 1 drop almond extract
- 1/4 cup flour
- 1/4 heaping teaspoon of baking powder
- pinch of salt
- 1 1/2 tablespoons milk
- Filling
- 1 tablespoon black raspberry jam
- Cream Cheese Blackberry Frosting
- 3 tablespoons butter, room temperature
- 2 tablespoons cream cheese, room temperature
- Small pinch of salt
- 1 cup powdered sugar, sifted
- 1/2 teaspoon vanilla extract
- 1 tablespoon heavy cream
- 1/2 teaspoon blackberry jam
- Preheat the oven to 350.
- Line 2 wells of a cupcake pan with cupcake liners.
- In a medium bowl, mix the egg white and the sugar until incorporated.
- Mix in the butter, vanilla extract, almond extract.
- In a small bowl whisk together the flour, baking powder and salt.
- Add the flour mixture to the sugar and eggs.
- Mix until smooth.
- Mix in the milk.
- Divide evenly into the cupcake liners.
- Bake for 15-20 minutes.
- Place the blackberry jam in a tiny bowl and microwave for 10 seconds.
- In a medium bowl, cream together the butter,cream cheese and salt until smooth with an electric mixer.
- Turn the mixer to low and add the powdered sugar.
- Add the vanilla extract and increase the mixer to medium.
- Beat in the heavy cream and mix on high until the frosting is fluffy, about 30 seconds to 1 minute.
- Fold in the blackberry jam.
- Inject the cupcakes with 1/2 tablespoon jam each.
- Top with frosting.
Tips on how to avoid a dry cupcake.
Spoon your flour into you measuring cup and level off with a knife. This prevents too much flour from being “packed” into your measuring cup
DONT overmix.

It makes a bit more. I like to pile my frosting on pretty high, but is makes enough to have a tiny bit left over.
