uh huh…didn’t listen,, did you? So now how do you feel about making your own kid cry even after being warned.
Brussel Sprouts, hated by all children. Feared by all offspring.
Seriously, how many nights were you left at the dinner table long after everyone had left, starring at that one little cabbage that your parents said you had to eat or you couldn’t leave the table? Finally after crying for about an hour, snot down to your chin, probably saying not so very nice things about your parents in-between your quivering bottom lip cry, you take your fork and stab the sprout. You put it in your mouth and chew it with your mouth open, not breathing through your nose in hopes not to taste it. And for some reason, you take 20 minutes to chew it. Wouldn’t it have been better to chew it really fast to get it over with? I suppose we didn’t get it back then did we? Or maybe you had a dog and got off easy. Not so much in my house.
But you know what??? EVERYTHING IS BETTER WITH BACON!
I took a risk in making these, you know, with all of their nightmare inducing qualities, but at least one of my kids liked them. I thought they were simply delicious. The drizzle of the balsamic glaze was perfect and the bacon certainly didn’t hurt.
I think Brussel Sprouts are making a come back in the food world. They are readily available fresh in the grocery store now. So pick yourself up a bag if you dare!!!
ROASTED BRUSSEL SPROUTS
1 pound fresh brussel sprouts, washed and trimmed of the rough “bud” on bottom and halved
Olive Oil
2 large shallots, thinly sliced
6 slices bacon, finely chopped
2 Tbsp Butter
Salt and Pepper
Preheat oven to 425
Line a baking sheet with parchment paper.
In a large skillet over medium heat, add bacon and sauté for about 5 minutes. Add the shallots and cook for another 3 minutes. Add Butter , brussels Sprouts, salt and pepper. Toss to coat.
Pour the sprouts onto the baking sheet, roast for 30 minutes, turning once.
Remove from oven and drizzle with the Balsamic Glaze.
I have to make them for myself as no one in my family will even try them. MAYBE this recipe will bring them to the other side!!!!!!!!!!!
awesome! everything IS better with bacon 😉
I will be using this recipe because my older kids actually LIKE the brussel sprouts and even ask for them on occasion.
Your picture looks beautiful too!
This is so funny because yesterday I saw the episode of Leave It to Beaver where he won't eat his brussel sprouts! Neither my husband nor I have ever tried them, but this seems like the way to go for our first taste! 🙂
Sounds good to me! My kids will try anything with bacon! 🙂
Leslie this looks good. Your right the bacon is a great perk. I used to sit at that dinner table and just look at those brussel spouts, I just couldn't eat them. I used to tell my mom to send them to the starving children they might like them. LOL I did find out though that my dog loved them, so under the table i fed him. Problem solved!!
They look delicious!! We never had brussel sprouts in my house because my mom was forced to eat them as a kid and hated them. So I didn't know until my adult life how much I love them! Yummy cabbages! My son is still unconvinced of their amazingness but I won't force him….more for me!
I posted recently things about myself and learning that I loved brussel sprouts was one. This is how I fix mine and they are fantastic!!
This is truly thr only way to est them.
I love brussel sprouts especially with bacon~~delicious!
I guess I got lucky, my offspring loves any vegetables, and I just never gave anyone a choice…oh does that insinuate I am mean as a brussel sprout :), oh yes it does, argh!
I was weird, cause I love them growing up and back when cheese or fried on vegetables was the IN food!
Isn't it weird to think at some point in our lives we turn from kids hating brussel sprouts to adults that freely choose to make them and more importantly, EAT them?! These do look delicious and I will certainly try them not because my parents are making me, but because I am an adult choosing to do so! Ha!
You are too funny! And yes, I shivered and quaked in fear…brussel sprouts…my nemesis.
I made my children try a lot of things. Never was I mean enough to force brussel sprouts. Probably because I won't eat them. All the rest of the ingredients sound good though, can I just eat that?
Okay IMO what doesn't taste good with bacon? 🙂 What is different in our household is my daughter lover brussel sprouts and I don't! This might just get me to try them, and like them!
You too sat at the table trying to gag your food down? To this day I don't like cold potatoes (potato salad) for this reason. We didn't have to take much but we had to at least take some and try it, or eat what we took. I never liked potatoes as a kid. Thanks for the memories:)
Ha! That's awesome. My mom actually gave up on brussel sprouts before I came along, fortunately. I'm still not really a fan, but my girlfriend loves them. I have a bag of frozen ones that I pull a handful out of every now and again to make for her. I'll have to try this way, I'm sure she'll like it.
Oh Les, you did this post for me!!! YUMMERS!!I would and WILL substitute veggie bacon for the real stuff and leave out the butter.. olive oil a touch is ok. I LOVE Brussels are my fave! As a kid I tried to swaller em whole and darned near choked to DEATH. I was almost a goner! Ughhh I hated them!
Yours look FABU. Hubby hates em. Why add bacon to a veggie dish?
ha
Love you!

lol, too funny! i LOVE this recipe! maybe i could even get my picky hubby to eat brussel sprouts if i make them this way!
Actually, my son would LOVE these! He begs me to get Brussel sprouts! I bet he would really like these : )
just found your blog and love it. These brussel sprouts look amazing and I so agree…everything is better with bacon 🙂
I will have to try this dish. I have NEVER eaten brussel sprouts. But, this looks and sounds good. Love your blog!!!
All kids hate veg! and I used to be one of them. I still don't enjoy but I eat them.
Everything is better with bacon. Even I may be able to choke one down! The dish is really pretty, but ohh, the sprouts are not my favorite 🙁
wow. and here i thought i didn't like brussels sprouts. methinks i was wrong, dead wrong, for roasting and charring many foods does miraculous things. thanks for the tip, leslie. 🙂
My nephews actually love brussels sprouts. They begged me to cook those for Christmas! They would love me if I made this for them some time. 🙂
I am daring!! I loooove brussels sprouts and they go so well with bacon and balsamic it only makes sense to combine them all in this fab dish.
My mother ruined brussel sprouts for me as a kid – she boiled them until they were a soggy mess. I think I need to give them another go…using this recipe! They look fantastic.
I don't like Brussels Sprouts, but I've never had them roasted and really need to try it! They look so pretty.
I love brussel sprouts! I am one of those weird kids that loved every vegetable and fruit!!!! I have not found one vegetable I do not like….I know, like I said weird…ha!
I REALLY want to learn to like brussel sprouts. this could be the recipe that does it!
Ha! Great post. I was thinking there at the beginning you were going to give Donna-FFW a run for her money! 😉
Everything is better with bacon! I'll have to get some brussel sprouts (course, I've already got the bacon!)
My girl used to like them, and ask for "Grussel Scrouts." That was when she was 3 and darling. Now she's 5 and opinionated and won't look twice at a brussel sprout. 🙁
These are great, BTW. I make mine with pancetta or prosciutto!
I've roasted them, but never with bacon and shallots. OMG. That would be fabulous. Can't wait to try it!
I've never had brussel sprouts! My mom never even made me try them! These look so tasty however, that will change immediately!
of course I did not listen and scrolled down. I want these right now! Shallots and bacon? YUM
I dunno, can we put some crushed up Cheez It's on there or something?
haaaaaay
I am so so so stealing this recipe very soon. They look unbelievably delicious!
I know that brussels sprouts are a love em or hate em vegetable but, I love them! Speckled with bacon and a balsamic vinegar and the roasted…Absolutely divine!
Yep…everything is better with bacon. My parents would make me sit there until the sprouts (or peas which i hated as well) were gone. So me being the smart girl thought I would fool them by hiding it in my milk. It worked on my Dad but never my Mom. Now I actually love sprouts and would enjoy this recipe.
I've never tried them. My mom didn't make them but yours do look good. LOL, my three are weird in that they LOVE veggies. I had one of them tell me not too long ago that he likes peas which led the others to agree. I, of course, was shocked as I don't like peas and have never made them. Needless to say they haven't gotten any. They'll get brussel sprouts instead…with bacon!

YUM YUM YUM YUM!!!!!!!!!!!!!!!!!!!!!!!
Roasted is the way to go!! Only my oldest daughter and I eat them this way. I too ate the mussy flavorless boiled brussels sprouts as a kid and never ate them again until maybe 5 yrs ago when I heard about roasting them. YUM! I need to make some soon.
Funnily enough, I never hated Brussels Sprouts. It wasn't really served that often in my house but we did eat it when we ate out at restaurants. We were brought up to eat everything and anything so I didnt develop nightmares about this vege. I must say the roasted version does look pretty darned good!
In my mind, I think I hate brussel sprouts, but that looks dang good!
It's taken me a long time to come around to brussels sprouts, but I do like them now – and this looks like a delicious way to serve them.

I've eaten and cooked brussel sprouts, about 40 years, and I believe, from very small kids to oldest here, could eat 5 lbs.at a meal!! My grandkids helped me harvest them, and got to cook now!!.The ones you buy are sorta bitter inside, but grow your own,and especially after the first frost, they are sweet inside.I always, fry my bacon, then, remove bacon, from deep skillet, add brussel sprouts, cover in water, with maybe 1/3 – 1/2 stick of butter.Slowly cook water out, then stir fry, adding bacon back. Then, they are gone!! About 15 plants, produce, about 5-7 lbs, every 6 days, and they are so much better, home grown!!I left out the salt and pepper,do it to taste.
It looks mouthwatering! Nobody would say "no" to these particular sprouts!
Ha! I love brussel sprouts. I don't know why everyone hates them!
Leslie, OH MY! This looks sooooo mouthwatering.
I'm so full right now and yet, this picture made me hungry.
Now that is what you call delish delish delish.
Haha Michael was just saying tonight how much better every dish is with bacon (well and butter). These brussel sprouts look amazing!!
I bought brussel sprouts this week to try another recipe and now I am torn between that one and this one. The bacon may swing me!
I can't believe you were risky enough to try to make them!! Oh the nights of crying at the table screaming that my mother was santan! I too did not have a dog but on occasion my sister would come in and I would sneak it to her THEN she would go flush it down the toilet!! Ahhh the good old days! I hate to admitt it but these look down right delicious! Great job!!
I've made them this way and LOVE them! One of my daughters loves brussels sprouts, green beans, green peas, spinach…but the other five kids HATE anything that looks like a veggie! If anyone hasn't tried Brussels sprouts made this way, they are fantastic!
i LOVE Brussels Sprouts! I hope everyone keeps hating them – more for you & me 😉 Hah!
Making these for Easter dinner tonight. We'll see if the boys will eat them. I'm excited and will eat them all (not all in one sitting) if they don't like them! I don't have any shallots or onions, so I'm using garlic.
I've been looking for a good brussel sprouts recipe. Found It! Thanks.
